Whole Wheat Flour Atta Sheera | Atta Halwa In Jaggery

Whole Wheat Atta Sheera is a very popular traditional Indian sweet made from whole wheat flour , and few other ingredients.  In indian cousin there are very different types of halwa , right now sharing a very simple and popular atte ka halwa OR atte ka sheera in jaggery

Ingredients
  

  • 1 cup whole wheat flour (coarse)
  • 1 cup jaggery
  • 1 cup ghee
  • 2 cup water
  • 7-8 raisins
  • Chopped almonds and cashew

Instructions
 

  • To make atte ka sheera  take a pan add 2 cup water  and add jiggery ,
  • Stir continue till all jiggery dissolve very well , then switch off the gas and keep it a side
  • Now heat 1 cup ghee in non-stick Or heavy bottom kadai ,
  • Add 1 cup atta and mix very well
  • Now saute on medium flame till it turns to light brown colour
  • Stir continuously, don’t leave it without stir even for seconds
  • after 10-12 minutes, the atta will start to change color and aromatic
    continue stir it for another5 minutes , and don’t allow it to burn
  • after 15 minutes you will see the changed color and a very nice aroma that’s the sign that your atta is roasted well.
  • Now keep flame very slowand add jiggery water very slowly and stir sheera continue .
  • If you add jiggery water in one go then you will get your atta lumpy and its very hard to break that lumps.
  • So make sure to add jaggery water very slowly and stir continue.
  • Keep stirring continuously, till wheat flour will absorb all the water
  • You need to stir for another 2-3 minutes and you will get your atta halva in perfect texture.
  • Add 7-8 raisins
  • Chopped cashew and almonds
  • Switch off the gas and serve hot alone OR with chana puri  

Notes

  • I am taking here ghee and atta in equal quantity so all the atta will be roast nicely and you will feel very nice aroma while eating and also you will not feel dry when eating sheera.
  • you can take half quantity of ghee but I recommend to take equal quantity
  • taken here coarse wheat flour if you don’t have coarse wheat flour then you can mix fine wheat flour and rava in half half  quantity.
  • Roast atta on slow to medium flame to prevent from burning
  • You can add pinch of cardamom powder
  • Also you can use sugar
  • If you taking sugar then there is two either you make syrup or directly add sugar and water directly into roasted atta.
