Winter is a season where many people feel they can indulge in comfort foods, or it can be a time for healthier eating. There are many foods that are perfect for the winter season, and this article will share one of the popular winter special recipe.

Tuver totha is Gujrati dish specially for winter. And gujrati’s winter season can’t complete without eating this delicious , flavourful  warm dish. Usually this recipe made with dry tuver lentil/pigeon pea but you can make it using fresh/green tuver also.

So let’s see the recipe of Tuver Totha

Ingredients

  • 1.5 cup Pigeon pea (suki tuver)

  • 3.5 cup water

  • pinch of baking soda

  • 1/2 tsp salt

  • 1 cup oill

  • 1 tsp cumin seeds

  • 2-3 dry red chili

  • 10-15 garlic cloves

  • 2 cup chopped green garlic

  • 1 cup white part of green onion

  • 5 onion paste

  • 4 tomato puree

  • 1 tsp turmeric powder

  • salt to taste

  • 2 tsp red chili powder

  • 2 tsp coriander powder

  • 1.5 cup chopped coriander

  • 1 tsp chole masala

  • 1 tsp garam masala

step by step recipe of tuver totha

  • first wash 1.5 cup dry lentil properly and soak it for 7-8 hours in clean water
  • after 7-8 water transfer it with water into pressure cooker , add more 2 cup water , add pinch of baking soda, add ½ tsp salt, cover it and cook up to 6-7 whistle on medium flame.
    then switch off the gas and let it cool down itself.
  • take a heavy bottom pan or kadai , heat 1 cup oil.
  • add 1 tsp cumin seeds , 2-3 dry red chili , 2 bay leaf , 10-15 garlic cloves , ¼ cup greenchili-ginger-garlic paste, saute it for 1 minute on slow flame.
  • then add 2 cup finely chopped green garlic , and saute it for 2-3 minutes on slow flame ( make sure garlic should not turn brown)
    add 1 cup white part of spring onion and saute it for 2-3 minutes on medium flame.
  • after that add paste of 5 onion , mix it and cook it till release oil for sides, after that add puree of 4 tomato , 1 tsp turmeric powder , salt to taste , mix it well, cover and cook for 2-3 minutes.
  • after 2-3 minutes add 2 tsp red chili powder , 2 tsp coriander powder and mix it well , cover it and cook again until oil release from sides.
  • after that add boiled lentil with water which remaining in pressure cooker, mix it well and let it boil for 4-5 minutes on slow flame.
  • then add ½ cup green part of spring onion , 1 cup chopped coriander , 1 tsp chole masala , 1 tsp garam masala mix it well and let it simmer for 1 minute.
  • that’s it your delicious tuver totha is ready to serve , I am serving here with brown bread , so roast bread slices in butter/ghee.
  • take out totha in serving bowl , garnish with some chopped onion , and nylon sev.
