Whenever you want to eat Handvo without fermentation Try this Instant recipe.
First of all soak sooji in curd for 15 minutes. After 15 minutes check the consistancy of batter if it requited water then add little water to adjust the consistancy. Now add ENO and lemon and mix it very well. Batter looks fluffy.
Now take a mixing bowl add Sooji batter, add grated carrot, chopped onion, green chili, salt as per the taste, red chili powder, coriander powder and mix all ingredients very well.
Take a nonstick pan heat the oil, add mustard seeds let it cracked, add cumin seeds, add curry leaves. Now add batter and give a round shape. Spread it equally.
Cover the lid and cook for 5 minutes. After five minutes open the lid and flip the handvo to other side let it cook for 2 minutes. And your handvo is ready. It looks very delicious, soft from inside and crispy from outside.
Enjoy your handvo with evening tea or just enjoy with ketchup, Green Chutney OR Dahi Chutney.
